Peppermint Chocolate Chip Cookies



Indulge in the perfect blend of rich chocolate and refreshing peppermint with these delightful cookies. Perfect for holiday gatherings or any time you crave a delicious treat.

Ingredients:

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1/2 cup crushed peppermint candies or candy canes

Instructions:

Preheat the oven to 350F 175C and line baking sheets with parchment paper

In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy

Beat in the eggs one at a time, then stir in the vanilla extract

In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt

Gradually add the dry ingredients to the wet ingredients, mixing until just combined

Fold in the chocolate chips and crushed peppermint candies

Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart

Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still slightly soft

Remove from the oven and allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely

A refreshing twist on classic hummus, this Broad Bean, Pea and Mint Hummus is packed with fresh flavors and perfect for snacking or as a party appetizer. The combination of broad beans, peas, and mint creates a vibrant and delightful dip.

Ingredients:

  • 1 cup broad beans, shelled and cooked
  • 1 cup peas, cooked
  • 1/4 cup fresh mint leaves
  • 2 cloves garlic, minced
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

In a food processor, combine the cooked broad beans, peas, fresh mint leaves, and minced garlic

Pulse the mixture until it becomes a coarse paste

Add tahini, lemon juice, and olive oil to the processor and blend until the hummus reaches your desired consistency

Season with salt and pepper to taste and blend again to incorporate the seasonings

Transfer the Broad Bean, Pea and Mint Hummus to a serving bowl

Garnish with extra fresh mint leaves and a drizzle of olive oil if desired

Serve with pita bread, fresh vegetables, or crackers
