This vegan pumpkin pie is rich and creamy, and it's great for Thanksgiving or any other fall event. It's made with healthy ingredients and lots of warm spices.
Ingredients:
- 1 1/2 cups canned pumpkin puree
- 1/2 cup coconut cream
- 1/2 cup maple syrup
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 vegan pie crust
Instructions:
Warm the oven up to 175F 350C
Put pumpkin puree, coconut cream, maple syrup, cornstarch, vanilla extract, spices, and salt in a bowl
Mix until it's smooth
Then, put the mix into the vegan pie crust
It should be baked for 45 to 50 minutes, or until the middle is set
Let it cool all the way down before you serve it
You can add whipped coconut cream or vegan ice cream on top before serving if you want to
