Ingredients:
- 1 block extra-firm tofu, cubed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1/4 cup olive oil
- 2 tablespoons fajita seasoning
- 1 cup quinoa
- 2 cups vegetable broth
- 1/4 cup fresh cilantro, chopped
- 2 limes, juiced
- Salt and pepper to taste
- Wooden skewers, soaked in water
Instructions:
In a bowl, mix tofu, bell peppers, and red onion with olive oil and fajita seasoning
Let it marinate for 30 minutes
Thread marinated tofu, bell peppers, and onion onto soaked skewers
Preheat the grill to medium-high heat
Grill kebabs for 10-12 minutes, turning occasionally, until tofu is golden and vegetables are tender
Rinse quinoa under cold water
In a pot, combine quinoa and vegetable broth
Bring to a boil, then reduce heat and simmer for 15 minutes or until quinoa is cooked
Fluff quinoa with a fork and stir in cilantro, lime juice, salt, and pepper
Serve tofu fajita kebabs over a bed of cilantro lime quinoa
Garnish with extra cilantro and lime wedges if desired
