There are lots of fresh flavors in these Rosemary Citrus Shrimp Tacos. A tasty taco is one with grilled shrimp that has been marinated and topped with crunchy red cabbage and creamy sauce. This old favorite has a new twist thanks to the rosemary.
Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1/4 cup fresh rosemary leaves, chopped
- 2 cloves garlic, minced
- Zest and juice of 2 oranges
- Zest and juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
- 8 small flour tortillas
- 1 cup red cabbage, thinly sliced
- 1/2 cup red onion, thinly sliced
- 1/2 cup fresh cilantro leaves
- 1/4 cup Greek yogurt or sour cream
- 1/4 cup mayonnaise
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
Instructions:
In a bowl, combine the chopped rosemary, minced garlic, orange zest, lemon zest, olive oil, salt, and pepper
Mix well
Add the shrimp to the marinade and toss to coat
Let it marinate for 15-30 minutes in the refrigerator
In a separate bowl, prepare the citrus dressing by whisking together the orange juice and lemon juice
Set aside
In a small mixing bowl, combine Greek yogurt or sour cream, mayonnaise, honey, and Dijon mustard
Mix until smooth
This will be your creamy sauce
Preheat a grill or grill pan over medium-high heat
Thread the marinated shrimp onto skewers and grill for about 2-3 minutes per side or until they turn pink and are slightly charred
Warm the flour tortillas on the grill for about 20 seconds per side
To assemble the tacos, spread a spoonful of the creamy sauce onto each tortilla
Add some sliced red cabbage and red onion to the tortilla
Place grilled shrimp on top of the vegetables
Drizzle the citrus dressing over the shrimp
Garnish with fresh cilantro leaves
